Recipe of the Week: Barbecue Chicken Pizza
Barbecue Chicken Pizza
1 12 inch pre-baked pizza crust (I handmade my own with Fleischman’s yeast dough).
1 cup dark & spicy barbecue sauce (you can use whatever flavor of your choice)
2 skinless chicken breast halves, cooked & cubed
1/2 cup chopped fresh cilantro
1 cup sliced pepperoni peppers
1/2 sliced mushrooms (optional)
1 cup sliced or chopped purple onion (sauteed or grilled)
2 cups shredded Colby-Monterey Jack cheese or cheese of your choice.
Preheat oven to 350 degrees.
Place pizza crust on a pizza pan. Spread the crust with barbecue sauce. Top with chicken, cilantro, pepperoncini peppers, onions, mushrooms, and cheese.
Bake in the preheated oven for 20 minutes, or until cheese is melted and bubbly.
Toppings: red pepper flakes, parmesan cheese
